Instant Pot Sweet Potatoes

There’s nothing like a creamy sweet potato!

I love throwing them into the Instant Pot and letting the magic happen!

I know I say this a lot, but This recipe for Instant Pot Sweet Potatoes really is simple! I think you’ll like them!

Here’s how we make Instant Pot Sweet Potatoes

Cut up your Sweet Potatoes, If they aren’t gigantic ones like we’ve been getting lately, you can throw them in whole, just poke a few holes in them with a fork first. (and add a couple more minutes to the time.)

place 1 cup of water in the bottom of your Instant Pot insert. use the trivet and either just throw those potatoes in there or you can put them in a handy steam basket.

Place lid and make sure it is set to SEAL. Then press pressure cook (or manual) and adjust the time to 8 minutes.

Instructions
  1. For perfectly consistently cooked Sweet Potatoes, I like to slice my them up before cooking. (you can totally throw them in whole after poking some holes in them if you want, just add 3-5 minutes cook time depending on size)
  2. pour 1 cup of water into the insert of your Instant Pot. Then put the trivet in.
  3. Now either place sweet potatoes right on top of the trivet OR use a steam basket (makes it easier to take out)
  4. place lid and check that lever is switched to seal. press Pressure Cook (or Manual) and adjust the time to 8 minutes.
  5. Naturally Release Pressure for 5 minutes or more. Then Release remainder of pressure. remove from the Instant Pot
  6. Season to your liking and enjoy! ~ My favorite is simply, butter, pink salt, and a little mozzarella cheese.

Instant pot brown rice

Instant Pot Brown Rice

Every one seems to make their Instant Pot brown Rice a little different. But, this is how I do it and it comes our perfectly fluffy every time!

Start with a cup of water at the bottom of the instant pot and the metal trivet. Instant pot brown rice

 

 

 

 

Next in oven safe bow. ( That fits inside the Instant pot) place your water, rice, and butter.  stir.

 

I love this Pyrex one!

Mine is a 6 cup!  instant pot side dishes

 

 

 

Place bowl on top of trivet inside the Instant Pot. Close lid, make sure valve is set to seal.

 

Set Manual for 19 minutes.

I usually let it Naturally Pressure Release a little bit, mostly because I get busy doing other things. But, if you are in a hurry you can manually release the pressure when it stops cooking.

Fluff with a fork, add salt to taste (and I usually add more butter too!)

  2. In an oven safe bowl (be sure it fits inside your IP) place the rice, water, butter and mix together. Place bowl on top of trivet inside IP.
  3. Lock lid onto Instant Pot. Set valve to seal. Set on Manual (High Pressure) for 19 minutes
  4. You can let it Naturally pressure release for 5 minutes if you'd like. or if you are in a hurry, go ahead and open it.

Instant Pot Cranberry Sauce

Cranberry sauce is one of my favorite sides, one of those things that completes that traditional Thanksgiving meal!  It seems like a necessity to me, in order to have that perfect bite with a little turkey, a little gravy, cranberry sauce. yuumm!!

 

Another great idea with this cranberry sauce is an appetizer!

Place a block of cream cheese on a tray (softened) and pour this cranberry sauce over it. serve with crackers or even graham crackers.

Its sure to be a favorite and you can rest easy because the instant pot has done the work for you!

Instructions
  1. Add the berries and the water. close lid and set valve to seal. cook for 1 minute.
  2. NPR for 7 minutes then Manually release the remaining pressure.
  3. Set to Saute mode and add the sweetener, vanilla and orange zest and Juice.
  4. Stir well, saute for 2-3 minutes as sauce thickens.
  5. It will continue to thicken as it cools. Pour into a dish or on top of cream cheese.

  2. Add 1 cup of water and the trivet to the instant pot. Throw the corn on top of the trivet to keep out of the water.
  3. place lid on and set valve to seal. Select Manual and adjust to 2 minutes. Quick release when pot is done!
  4. smother with melted butter and any seasoning you like!
