Instant Pot Meatloaf and Potatoes!

We have 3 growing boys in our house and growing appetites! Meat Loaf and potatoes have become a staple for us. And our 7 year old even calls it his ” Favorite Dinner ever”.

This Instant Pot meatloaf and potatoes are of course easy (our favorite thing about the Instant pot), cooked in one pot and done without heating up the house with a hot oven on for an hour! (we only turn on the broiler for a few minutes to caramelize the top at the end. But, more on that later!)

Here’s how we make our Instant Pot Meatloaf and potatoes

Start by peeling and chopping your potatoes. We love this automatic peeler!!

Add 1 and 1/2 cups of water to the instant pot, and place the trivet down too ( this prevents any potatoes sticking to the bottom and causing the burn notice.)

pour the potatoes into the pot.

Next, mix all of the meatloaf ingredients together..

honestly this is just best done by hand.. it’s messy but everything gets incorporated nicely!

form the meatloaf into a round loaf, to fit in the pot. Now, you can either, form a makeshift pan with foil, folding up the sides of the foil around your loaf or if you’d rather not cook with foil, you can use parchment paper or even a steamer pan.. with parchment paper on the bottom… ( i think some way for the juice to drain is a good idea, so a steamer pan like this with some wholes in it, works nicely.) I did notice the last time I tried a pan like this, it cooked beautifully, but didn’t stay as a firm loaf as well as when i just place it on foil.

whichever you use for your loaf, place it on top of the potatoes and close the lid. Remember to make sure the gasket on the lid is set to seal.

Set the pot to Manual (or pressure cook on some models) for 25 minutes.

then let Naturally release for 5 – 10 minutes. meanwhile, mix the topping in a separate bowl.

once done, remove the meatloaf, set on a baking sheet. Coat with topping ingredients. we like to set the whole meatloaf under the broiler for just a few minutes. Keep an eye on it!!

Now for the potatoes, I like to drain some of the water out, then smash them up with half a stick of butter and a splash of milk, salt and pepper to taste…. for extra creamy potatoes add some cream cheese or sour cream too!

If you like your potatoes with gravy, we usually just mix up a quick gravy on the stove.

Instructions
  1. Peel the potatoes and chop. Place 1 1/2 cups of water into the pot, and dump in the potato chunks. (I like to place a trivet on the bottom, just to prevent burn notice. but may not be necessary.)
  2. mix all the meatloaf ingredients together. This is best done by hand, so just get a little messy. Then form the meat into a round loaf. placing it on some foil. bend the edges up to make kind of a pan. place meatloaf on top of potatoes in the Instant Pot.
  3. place lid on the pot, make sure the valve is set to seal. Select the manual (pressure cook) button and select 25 minutes. Make gravy and veggies while this cooks! (optional of course)
  4. allow the pot to Naturally Release Pressure for 5 minutes. Meanwhile, mix the topping ingredients together. and turn on the broiler. (optional)
  5. Pull out the meatloaf, set on a cookie sheet, spread topping and stick under the broiler for just a few minutes. watch this closely!!
  6. For the potatoes, I prefer to drain most of the liquid out. add the butter, milk, sour cream or whatever else you like in your potatoes. Mashup with a hand mixer adding pepper and salt to taste. seve and enjoy!
