Late For New Years

Happy New Year! I know, that was so last week! hahaha I’m a little late for New Years, But, I’m slowly getting into the groove here.

Do you like the New Year? I get super excited about all the New. But, then I get super overwhelmed by it very quickly!

I love setting goals and getting organized, but I also don’t order a new planner or get any calendars until the first week of January, so I sit here waiting for them to arrive and then scramble to get started using them.

And you know what? It’s ok to be late for New years

And why does it feel like no one remembers how to do the school thing, (even mom) after a 2 week Christmas craziness break? We have been struggling to focus, that is for sure.

But, I won’t let any of it stop me from planning, dreaming, setting goals and even getting my calendar in order… even if it’s mid-January when I do.

Instant pot brown rice

Instant Pot Brown Rice

Every one seems to make their Instant Pot brown Rice a little different. But, this is how I do it and it comes our perfectly fluffy every time!

Start with a cup of water at the bottom of the instant pot and the metal trivet. Instant pot brown rice

 

 

 

 

Next in oven safe bow. ( That fits inside the Instant pot) place your water, rice, and butter.  stir.

 

I love this Pyrex one!

Mine is a 6 cup!  instant pot side dishes

 

 

 

Place bowl on top of trivet inside the Instant Pot. Close lid, make sure valve is set to seal.

 

Set Manual for 19 minutes.

I usually let it Naturally Pressure Release a little bit, mostly because I get busy doing other things. But, if you are in a hurry you can manually release the pressure when it stops cooking.

Fluff with a fork, add salt to taste (and I usually add more butter too!)

  • 1 1/2 cups Brown rice Uncle Ben's
  • 3 1/3 cups water or you could use chicken broth
  • 1 T Butter plus more for serving
  • Salt to taste

Instructions
  1. Place 1 cup of water in bottom of Instant Pot insert with a metal trivet.
  2. In an oven safe bowl (be sure it fits inside your IP) place the rice, water, butter and mix together. Place bowl on top of trivet inside IP.
  3. Lock lid onto Instant Pot. Set valve to seal. Set on Manual (High Pressure) for 19 minutes
  4. You can let it Naturally pressure release for 5 minutes if you'd like. or if you are in a hurry, go ahead and open it.

Instant Pot Cranberry Sauce

Cranberry sauce is one of my favorite sides, one of those things that completes that traditional Thanksgiving meal!  It seems like a necessity to me, in order to have that perfect bite with a little turkey, a little gravy, cranberry sauce. yuumm!!

 

Another great idea with this cranberry sauce is an appetizer!

Place a block of cream cheese on a tray (softened) and pour this cranberry sauce over it. serve with crackers or even graham crackers.

Its sure to be a favorite and you can rest easy because the instant pot has done the work for you!

Instructions
  1. Add the berries and the water. close lid and set valve to seal. cook for 1 minute.
  2. NPR for 7 minutes then Manually release the remaining pressure.
  3. Set to Saute mode and add the sweetener, vanilla and orange zest and Juice.
  4. Stir well, saute for 2-3 minutes as sauce thickens.
  5. It will continue to thicken as it cools. Pour into a dish or on top of cream cheese.
