Whether you are feeding a crowd or just a few, Instant Pot Mashed Potatoes will be a hit. And you’ll soon see they couldn’t be easier!
Start by peeling and chopping your potatoes. We like Russet potatoes best!
Put 1 cup of water in the bottom of your instant pot insert (if you are making a lot like 10-15 lbs, bump up the water by 1/2 a cup), place a metal trivet or a strainer in to the pot.
I don’t like to do the potatoes straight on the bottom of the IP insert because I tend to get a burn signal every time!
close lid, set valve to seal and select Manual (high pressure) for 8 minutes.
Once done cooking, manually release the pressure!
Now, if you want you can remove the trivet and dump out the potatoes right into the pot, add butter, cream, salt, and pepper. and anything you like in your potatoes. When we are feeling fancy we will add cream cheese or cheddar cheese!
Smash with a hand mixer, right in the instant pot insert.
These potatoes are so melt-in-your- mouth creamy!
* As a general rule, 1/2 a pound of potatoes is 1 serving! so make as little or as much as you need! 🙂
